Vegan Protein Fudge Brownies

These fudge brownies require only a few ingredients and are super quick to prepare.  

Made from black beans, which are highly nutritious, they're a great treat for everyone who wants a healthy chocolate dessert or just wants to incorporate more beans into their diet.

If you don't have all the ingredients on hand, look at the substitute list. Pumpkin puree, almonds and cacao butter can be easily replaced by other ingredients that are found in most kitchens. 

The basic version of this brownies can also be made by using only black beans, cacao powder, dates and protein powder. 

Let's make you some brownies! 


8 servings

  • 2 cups cooked black beans 
  • ½ cup raw cacao powder
  • 1 cup pitted dates*
  • ½ cup pumpkin puree
  • ⅓ ground almond
  • ¼ cup cacao butter
  • 1 tsp vanilla
  • Pinch of cinnamon 


  1. Combine all the dry ingredients in a bowl.
  2. Pulse black beans and pumpkin puree in the food processor or blender.
  3. Gradually add dates and when they form a smooth batter, pour some vanilla extract.
  4. Start adding dry mixture, stopping your food processor in the meantime to scrape down sides.
  5. At the end add melted cacao butter.
  6. Pour the batter into a small cake pan and place in the fridge for a couple of hours.

Protein brownies will keep for 3-4 days in the fridge. They are also suitable for freezing.
*If you have a ‘sweet tooth’ you might add a few more dates.


PUMPKIN PUREE - replace with mashed banana, apple sauce or sweet potato puree.

CACAO BUTTER - you can substitute with coconut oil, but the flavor will slightly change. If you want to make them low in fat, you can omit cacao butter and serve them in ramekins. 

GROUND ALMONDS - can be replaced with other nuts e.g. hazelnuts or walnuts. You can also omit ground nuts altogether and use oat flour or protein powder. 

When using protein powder start with one scoop of chocolate flavored one and add up to two scoops. If you decide to use chocolate protein powder start with 1/4 cacao powder and add more if needed.
